The Winetailor Project

Winetailor is an on-going initiative within Winecircus driven by a passion for wine and the motivation to produce high quality, exceptional, limited-edition wines that go beyond normal organoleptic goals. The aim is to produce individual"tailored" wines for clients who want unique products that faithfully capture the character of a terroir but, also have a particular and original taste they may have in mind. To do this, Winetailor applies the ideas and approaches pioneered within Winecircus to give clients a range of possibilities from which they can choose to create their own unique new wine. It then works with the client to select the combinations that capture their particular vision while retaining the character of terroir. The result is a tailored wine, which like a tailored suit, is a unique reflection of both the owner's taste and the rigorous skill that goes into its making.

 

Winetailor: A Singular Experience

An singular experience and an exclusive wine---this is what Winetailor offers. The Winetailor experience begins with a personal meeting between you and Roberto Cipresso in Montalcino, the cradle of great Tuscan red wines, during which you exchange ideas over a working breakfast.
Next, you move on to the nearby Winecircus workshop located in an old, restored, railway station in Torrenieri. At the workshop, you taste a sample of eight wines. Each sample wine is personally chosen for you by Robert and the other experts at Winecircus, according to your ideas and the taste you want to achieve. Each of the samples also captures the qualities of a particular growing region. Out of those eight sample wines, four will be selected for blending to make three different test cuvées. From these three exclusive cuvées, you select your final tailored wine.
Your personalised wine will be ready five months later. It can be ordered in quantities of 300 bottles, which is exactly the amount held by the individual oak barrels your wine ages in. Each bottle carries a unique label that indicates the vineyard of origin, alcohol content, vintage, your signature, and that of Roberto Cipresso. Your wine is documented and accompanied by a detailed logbook that gives information on its ingredients, method of production, and the unique efforts that went into creating it.
