Winemaking was founded by Roberto Cipresso in 1998. He wanted to bring together, in one place, professionals who could provide effective input on the entire winemaking process from vine to wine. The mission of Winemaking is to value the "terroir" and passionately embrace old and new, research and archeaology. Winemaking also believes that every action in the field or cellar is part of a constantly growing legacy of knowledge that should be documented each year. This knowledge gives added value to wine and is an asset for company growth. It is a formula for future success and achieving "total quality".
Winemaking's Philosophy and Work Method is to:
- Analyse the ecosystem of a growing area
- Measure its limitations and possibilities
- Assess existing vineyards
- Consider possibilities for soil recovery and renewal
- Estimate the quality of available and existing equipment
- Train farmers and fieldworkers in conjunction with oenological goals
- Develop new areas of viticulture research
- Study and compare the values of different vintages
- Apply oenological ideas in synch with the agricultural cycle or year
- Provide input for wine cellar design and development
- Develop strategies for making wine that faithfully reflects the terroir
- Select materials and tools appropriate to achieving given oenological goals
- Educate wine cellar personnel
- Develop new areas of oenological research
- Taste and evaluate wine at each point in its evolution
- Provide input on production philosophy, product image, and product development
